Recipe: Pickled Beetroot

We all have that favorite fruit or vegetable that comes for a few months in a year. Beetroot is one such seasonal veggie that I love. I recently posted my very first video on YouTube where I talked about different ways to improve the shelf life of the produce commonly used in our kitchen.

In this video, I shared pickling seasonal vegetables like Carrot and Beetroot as one of the methods to increase their shelf life. Pickling is such a fun way to reintroduce a food. I first discovered a pickled beetroot while trying shawarma at a mall in Delhi. The tangy and acidic taste of the pickle went so well with the spices in the shawarma. It was truly a revelation. Pickles are not a novel concept in India. In fact, the Indian pickles are almost a staple. But, this was something different and I had to try making it at home.

I want to share with you how I make, package, and store pickled beetroot. You can use the same packaging and storage techniques for pickling carrots, celery, and cucumber.
